Fruit salsa is one of my favorite summer snacks. The tangy and sweet combo is such a refreshing treat! I made this for my mom for Mother’s Day and she loved it. Here is the recipe so you can surprise YOUR mom with a tasty and (kind of) healthy dessert.
Ingredients for cinnamon chips:
- 10 flour tortillas
- Cooking spray
- 1/3 cup sugar
- 1 teaspoon cinnamon
Ingredients for salsa:
- 2 apples
- 2 tablespoons lemon juice
- 1 cup chopped kiwi
- 1 pound strawberries
- ½ pound raspberries
- 4 tablespoons raspberry preserves
For the cinnamon chips, spray each tortilla with cooking spray on both sides, then sprinkle the cinnamon/sugar mixture over both sides. Cut the tortillas into slices with a pizza cutter, then place them on a baking sheet for 8 minutes at 350 degrees. For the fruit salsa, first, finely chop the apple and add the lemon juice to it. Mix. Finely chop the strawberries and kiwi, then the raspberries. Add all ingredients to the apples and combine. Then add in the raspberry preserves and mix. Refrigerate for about 10 minutes, then serve!
The cinnamon chips give this recipe a delicious sugary addition! It is a time-consuming process to make this salsa and the chips to eat it with, but it is so worth it in the end.
XOXO, Chels
