Homemade Mango Fruit Roll-Ups

How many of you ladies love yourself a juicy Fruit Rollup? A Savory Fruit by the Foot? Some tangy Gushers? Well if you can say yes to any of the above, then tune it! Today I am going to teach you how to make healthy, homemade mango fruit rollups! The best part? There is no sugar, so you can feel great about snacking away on these yellow goodies!
You will start out with 4 cups of diced ripe mangos. That is about 3 mangos. Preheat your oven to 175 and line 2 rimmed cookie sheets with parchment paper. Puree the mango in a blender or food processer until it is smooth.
Divide the puree evenly between the two cookie sheets. Use a spatula to spread the puree as flat as possible until it is about 1/8th of an inch thick. Bake the mango for 3-4 hours. You will know the roll-ups are done when the puree is dry to the touch. If the bottom of the roll-ups is still wet after a while, flip them over and continue baking them until they are dried.
Remove them from the oven. Place a piece of wax paper on top of the roll-ups and peel the roll-ups off of the baking sheet. Cut the mango into long strips and then roll them up along with the wax paper in-between the rolls so that the mango does not stick together. Toss the rolls in a plastic baggy if you need an on-the-go snack or just munch on them at home! They are a great, fun, healthy snack when you want something sweet!
