Hot Chocolate Cupcakes with Marshmallow Frosting

What if I told you that I could put everything you love about hot chocolate into a cupcake? Even the delicious marshmallows? Well, I can, and I am going to share with you just how to do it! These cupcakes will make you want to curl up next to the fire with a blanket and a book, just like a cup of hot chocolate makes you feel. The homemade marshmallow frosting on these is to die for, and it only takes minutes to make! Here is how.
Cupcake ingredients:
- 3/4 cup unsalted butter
- 3 cups unbleached all-purpose flour
- ¾ cup canola oil
- 4-1/2 oz. chopped bittersweet chocolate
- 3 cups granulated sugar
- 3/4 cup natural unsweetened cocoa powder
- 3 large eggs at room temp
- ¾ cup room temp buttermilk
- 2 Tbs. vanilla extract
- 2-1/2 tsp. baking soda
- ½ tsp. salt
Ingredients for the frosting
- 1½ cups sugar
- 2 tablespoons light corn syrup
- 6 large egg whites
- 1 teaspoon pure vanilla extract

Directions for the cupcakes
Heat your oven to 350°F. Place cupcake liners into your cupcake pans. In a large saucepan, add the butter, oil, 1 cup of water, and chopped chocolate. Heat over medium heat until combined, melted and fully. In a large bowl, whisk the flour, cocoa powder, and sugar. Pour the hot chocolate mixture into the sugar mixture and whisk until combined. Whisk in the eggs one at a time, and keep mixing so they do not scramble. Next whisk in the buttermilk, vanilla, salt, and baking soda. Fill each cupcake liner about two-thirds full. Bake the cupcakes for 17-22 minutes, or until a toothpick comes out clean when stuck into the center. Cool on racks for about 10 minutes.
Directions For the frosting
In the bowl of an electric mixer set over a saucepan of simmering water, combine sugar, corn syrup, ¼ cup water, and egg whites. Cook over medium heat, stirring frequently for about 2 minutes. Whisk the mixture on high speed using the electric mixer until it is glossy and voluminous, or about 5 minutes. Beat in the vanilla, and then top your cupcakes with the frosting.
