I am all about clean eating, so I love when I can find sweet treats that are low fat and low calorie. Boy did I hit the jackpot with these cookies! They have less than 100 calories each and they are the perfect mixture of sweet and tart. Here is how to make this refreshing spring snack!

Ingredients:  strawberry-oatmeal-cookies3-Ts

  • 1 c. instant oats

  • ¾ cups whole wheat flour

  • 1 ½ tsp baking powder

  • ½ tsp ground cinnamon

  • 1/8 tsp salt

  • 2 tsp melted coconut oil

  • 1 room temp egg

  • 1 tsp vanilla extract

  • ½ c. honey

  • 6 tbsp fresh diced raspberries

In a bowl, whisk the oats, flour, baking powder, cinnamon, and salt. In another bowl, whisk the coconut oil, egg and vanilla together. Stir in the honey and then add in the flour mixture. Stir until it is smooth, and then fold in the raspberries. Chill the mixture for 30 minutes and preheat the oven to 325. Line a baking sheet with parchment paper and drop the dough onto the sheet in 15 rounded scoops. Bake for 13-15 minutes and then let them cool for 15 minutes on the sheet.

I am so excited to make these cookies, they sound so fresh and tasty! Perfect for any Easter or spring gathering.

XOXO, Chels
