I am always looking for new healthy snacks. Sometimes, snacking on fruit isn’t super filling and I need something with a little more “oomf” to give me healthy energy. I found a super delicious recipe for “Healthy Strawberry Oat Squares” on the blog “Sally’s Baking Addiction” and I cannot wait to make my very own homemade granola bars! Ingredients:


  • 2 Tablespoons cornstarch

  • 2 Tablespoons warm water

  • 2 cups finely diced strawberries

  • 1/4 cup maple syrup

  • 1 Tablespoon granulated sugar

  • 2 and 1/4 cup quick oats

  • 1 teaspoon ground cinnamon

  • 1 cup almond butter

  • 1/4 cup maple syrup

  • 1/4 cup apple butter

  • 1 large egg, beaten

  • 1/2 cup sliced almonds

  1. First you make the strawberry filling. Do this by mixing the cornstarch with the warm water until all of the cornstarch has dissolved and there are no clumps. Set the mixture aside. Then combine the strawberries, maple syrup, and sugar together in a small pan over medium heat. Bring the mix to a boil and stir well. Remove it from the heat and then stir in the cornstarch. Whisk until the clumps are gone and set it aside to cool and thicken.

  2. Preheat your oven to 325 degrees. Line an 8×8 baking sheet with aluminum foil and set it aside. Next we make the oat crust/topping. In a large bowl combine the quick oats, cinnamon, maple syrup, butter, apple butter, almond butter, and beaten egg. Mix this together until the oats are moistened and everything is well combined. Set ½ cup of the mixture aside. Press the rest of the mixture into the baking sheet. Firmly press it down and make sure it is even. Spread the strawberry filling on top of it and then crumple the remaining oat mixture on top, using a spatula to firmly press the topping into the filling.

  3. Bake for 25-30 minutes. The topping will be lightly browned. Allow to cool completely before cutting into squares.

This mixture makes about 9-12 squares, so you should be all set with snacks for a while!
