Strawberry Oat Squares

Strawberry Oat Squares
http://www.chelseacrockett.com/wp/wp-content/uploads/2015/01/chelsea-crockett-Strawberry-Oat-Squares.jpg

I am always looking for new healthy snacks. Sometimes, snacking on fruit isn’t super filling and I need something with a little more “oomf” to give me healthy energy. I found a super delicious recipe for “Healthy Strawberry Oat Squares” on the blog “Sally’s Baking Addiction” and I cannot wait to make my very own homemade granola bars! If you want to make them with me, here is how…

Ingredients:

  • 2 Tablespoons cornstarch
    71b12d72e08fac8925ced69eb767ec4e

  • 2 Tablespoons warm water

  • 2 cups finely diced strawberries

  • 1/4 cup maple syrup

  • 1 Tablespoon granulated sugar

  • 2 and 1/4 cup quick oats

  • 1 teaspoon ground cinnamon

  • 1 cup almond butter

  • 1/4 cup maple syrup

  • 1/4 cup apple butter

  • 1 large egg, beaten

  • 1/2 cup sliced almonds

  1. First you make the strawberry filling. Do this by mixing the cornstarch with the warm water until all of the cornstarch has dissolved and there are no clumps. Set the mixture aside. Then combine the strawberries, maple syrup, and sugar together in a small pan over medium heat. Bring the mix to a boil and stir well. Remove it from the heat and then stir in the cornstarch. Whisk until the clumps are gone and set it aside to cool and thicken.

  2. Preheat your oven to 325 degrees. Line an 8×8 baking sheet with aluminum foil and set it aside. Next we make the oat crust/topping. In a large bowl combine the quick oats, cinnamon, maple syrup, butter, apple butter, almond butter, and beaten egg. Mix this together until the oats are moistened and everything is well combined. Set ½ cup of the mixture aside. Press the rest of the mixture into the baking sheet. Firmly press it down and make sure it is even. Spread the strawberry filling on top of it and then crumple the remaining oat mixture on top, using a spatula to firmly press the topping into the filling.

  3. Bake for 25-30 minutes. The topping will be lightly browned. Allow to cool completely before cutting into squares.

This mixture makes about 9-12 squares, so you should be all set with snacks for a while!

Enjoy!

XOXO, Chels

Eat Your Way to A Stronger Immune System!
http://www.chelseacrockett.com/wp/wp-content/uploads/2014/11/Chelsea-Crockett-Eat-Your-Way-to-A-Stronger-Immune-System.jpg

As winter quickly approaches, you probably hear the sound of coughing and sniffling a lot more than usual. The colder months are also the sickest months.  Lovely isn’t it?!  Although washing your hands and exercising are great ways to fight off viruses, you can also eat your way to a healthier and stronger immune system!  Check out what you should be stocking up on in your kitchen!Chelsea Crockett- chicken soup

  1. Sweet Potatoes increase the number of infection-fighting cells!

  2. Dark Chocolate is loaded with zinc, which promotes the growth of white blood cells and decreases your risk of infection.

  3. Tea increases immune boosting protein interferon in the blood system to help fight infections. It’s also perfect to soothe a sore throat!

  4. Chicken Soup can actually replace cough medicine! It has been shown to coat a sore throat and thin mucus.

  5. Yogurt replaces all the good bacteria in your system!

  6. Mushrooms promote white blood cell growth, which in turn fights off unwanted infections!

  7. Strawberries are packed full of vitamin C…watch out oranges! Vitamin C starts battling infections before they turn to viruses.

Go run to your nearest grocery store and stock up on these few essential items! Your health will thank you for it!

XOXO,

Chelsea

Spruce Up Your Water

Spruce Up Your Water
http://www.chelseacrockett.com/wp/wp-content/uploads/2013/11/Chelsea-Crockett-Spruce-Up-Your-Water.jpg

Do you ever just get tired of the taste of water? Water is SO important to stay healthy, but sometimes the taste is just so boring that you just don’t drink enough. Now when it comes to a tall glass of Root Beer, I can down a glass of that in a jiffy! Here are some ways to mask the bland taste of water so you want to drink more!

The first way to mask the taste of water is to put lemon or lime in your water. Not only is this 0 calories, it is also super good for you! Drinking cold lemon water can help speed up your metabolism and also helps balance out your stomach acid! As for me, I like to put a squirt of lime juice in my ice water every once in a while, it is so refreshing and almost tropical!

The next way to spruce up your water, if you have a sweet tooth, is to add fresh fruit to it! Add strawberries, watermelon, whatever fruit you want, and let it sit in a pitcher of water in the fridge overnight.

Chelsea Crockett

In the morning, pour yourself a tall glass of sweet, fruity goodness! You can pour this refreshing concoction into a water bottle and take it with you wherever you go. It will help reduce your food cravings and keep you hydrated at the same time!

Hopefully these suggestions help you drink more H2O!

XOXO, Chels
