Homemade Microwave Potato Chips

I am a lover of healthy snacks, but sometimes a girl craves a handful of greasy, salty potato chips. Ya feel? Lucky for you (and me), I found a recipe for homemade potato chips that are low fat, cheap, and made in your microwave! Yummy snack here we come!

Ingredients:

  • 1 large russet potato, scrubbed and sliced thinly16117462567_751b5aacf8_b
  • Salt
  • Optional: olive oil and other seasonings.

Slice your potato very thin into 1/8 or 1/16 inch slices. Put the slices directly into cold water and let them sit for 5 minutes, then rinse them in cold water until clear. Use paper towels to dry the slices, then line a glass plate or tray with parchment paper and arrange the slices on it. Make sure they do not touch each other or they will stick together. If you like you can sprinkle your slices with salt or seasonings, or you can even brush them with olive oil. Place them in the microwave and cook them on high for 3 minutes. After that, flip the slices over and microwave them on 50% power for about 2:30. If you see slices starting to turn brown, take them out and continue cooking the rest. Keep doing these steps with the rest of your potato slices until they are all cooked. If you don’t gobble them up right away, store them in an airtight container for future snacking!
