Apple Pie Stuffed Apples

I found the most AMAZING fall recipe on the Sally’s Baking Addiction blog! It is for apples that are filled with apple pie. Holy smokes, I think I am in love! With a touch of vanilla ice cream on the side, these mini apple pies may just knock your socks off. Here is how to whip yourself up a batch!

Ingredients:

  • 1/2 of a homemade pie crustmedium
  • 1 teaspoon cornstarch
  • 1 tbsp warm water
  • 5 large, round, firm Granny Smith apples
  • 1 tsp cinnamon
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 tsp milk

 

Make the pie crust and then allow it to chill for 2 hours. In a small bowl mix the cornstarch and warm water until it is creamy and the cornstarch has dissolved. Put it to the side and then peel and dice 1 of the apples. Cook the apple pieces, cornstarch mixture, cinnamon and sugar in a medium saucepan over medium heat. Stir regularly for 5 minutes and then let it simmer for 5 more minutes. After removing the pot from heat, add in the vanilla and let it cool for 20 minutes. Sprinkle flour onto your counter and then roll out the pie dough until you have a circle that is 10 inches wide. Cut the dough into fourths with a pizza cutter, and then cut each quarter into .25 inch wide strips. After preheating the oven at 375F degrees slice the tops off of the last 4 apples. Use a spoon to dig out the core and then spoon the apple filling you made on the stove into the apples. Lay 3 strips of the cut pie dough across the top of the apples, and then weave 3 more strips across the dough the other way. Trim the extra dough off and then place the apples on a baking pan. In a small bowl whisk the egg and milk together and brush the mixture on top of the dough on the apples. Sprinkle the tops with cinnamon, then bake them for 25-30 minutes. If you and your friends/family don’t scarf all of the apples down, store them in the fridge!
