Almond Joy Cookies

One of my favorite candy bars is Almond Joy. I love the yummy mix of coconut with milk chocolate and then that little hint of nut flavor...mmmmm! Did you know there is such a thing as Almond Joy oatmeal cookies?! Here is how to make these mouthwatering morsels. 

  • 1cup softened butter
  • 1 12cups white sugardsc07701__sharpshot_active_version1
  • 1 12cups brown sugar
  • 4 eggs
  • 3 teaspoons vanilla
  • 2 teaspoons baking soda
  • 1 teaspoon kosher salt 
  • 5 cups chocolate chips 
  • 2 cups sweetened coconut 
  • 2 cups chopped toasted almonds
Pre-heat your oven to 375°F  and lightly grease cookie sheets. Combine all of the dry ingredients and set them aside. In a large bowl, cream the butter and sugars together. Beat in the eggs one at a time and stir in the vanilla. Stir in the dry ingredients until they are well mixed then stir in the chocolate chips, coconut and almonds. Drop by rounded tablespoonfuls onto the cookie sheets. Bake the cookies for 8 to 10 minutes and let them cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
