Strawberry Pineapple Salsa

When I think about summer snacks, fruit always seems to come to mind. A juicy, sweet piece of fruit always seems to hit the spot in the sweltering heat. If you are a fruit lover, and a snacker, then you will love this totally snack-worthy fruit salsa recipe! Plus, you can make cinnamon tortilla chips to dip into your sweet salsa. Delish!

Ingredients:

  • 2 cups pineapple chunksstrawberrypineapplesalsa2_bakedbyrachel
  • 2 cups chopped strawberry
  • 8 tortillas, 8 inches wide
  • 6 tablespoons unsalted, melted butter
  • 6 tablespoons granulated sugar
  • 1 ½ teaspoon cinnamon

Preheat your oven to 350 degrees, and line two baking sheets with parchment paper. Combine the cinnamon and sugar in a bowl and set it aside. Cut your tortillas into chip-sized pieces. Cut them like you would a pizza. Brush the pieces with melted butter and then sprinkle the cinnamon sugar on them. Bake them for 10-15 minutes, then transfer them to a plate to cool. In a big bowl, toss the pineapple and strawberry chunks. If you want, you can add a dash of sugar to this to sweeten it up a bit. Now all that is left to do is gobble this fresh treat up with your cinnamon sugar chips!
